A kanelbulle starts with cardamom

The smell people call cinnamon is only half of it. A Swedish kanelbulle begins with soft yeasted dough scented with freshly ground cardamom, followed by butter, cinnamon and sugar folded or rolled through the middle.

You make the dough with a baker, shape the buns by hand and finish them with pärlsocker — pearl sugar — rather than icing. The twist looks easy until you try it. By the third or fourth bun, your hands begin to understand what the baker explained ten minutes earlier.

They go into the oven looking slightly uneven and come out much more convincing. Eat one warm; the rest can be wrapped for later.
